
Avocado-Elderberry Lassi with Coriander

Ingredients
Serves 2
- ½ ripe avocado, sliced and roughly chopped
- ½ small cucumber (approx. 300 g), sliced and roughly chopped
- 150 g plain yogurt
- 2 ½ tablespoons elderberry syrup
- 1 handful coriander leaves
- 1 tablespoon lemon juice
- 50 g ice cubes
- Salt and pepper
Preparation
Mix all the ingredients together in a Crystal or Copol bottle. Season with salt and pepper and pour into chilled glasses.
Ingredients for Spicy Falafel (Accompaniment)
Serves 4
- 200 g chickpeas
- 1 onion, finely chopped
- 1 garlic clove, minced
- 1 pinch of chili powder
- 1 teaspoon ground coriander
- 1 tablespoon ground cumin
- 1 pinch ground mace
- 1 tablespoon salt
- 1 tablespoon lemon juice
- ½ teaspoon baking powder
- 1 bunch fresh coriander, finely chopped
- Peanut oil for frying
Preparation
Put the chickpeas in cold water and let them soften overnight. Drain and rinse with cold water. Purée in the mixer, then add in all the other ingredients and mix briefly.
Transfer the contents to a bowl and check for seasoning. Let marinade for 20 minutes. Use two teaspoons to form dumplings and fry them at 170°C until golden brown.
Allow them to drain on paper towels and serve with the lassi.
To purée hard ingredients in the FRXSH, add a little water.
